Spinach Casserole by Lindsay Litowitz

From the book “Not Your Bubbe’s Recipes” by Birthright Israel Next, Atlanta.

3 pkg Chopped Spinach – defrosted and drained

2 Eggs Beaten

2 cps Cottage Cheese

1/2 cp Matzo Meal

1 cp Parmesan Cheese

1 Onion, Finely Chopped

1/2 cp Sour Cream

Mix all together and pour into casserole dish. Bake for 1 1/2 hours at 350 degrees.
