All-You-Need-Is-A-Teaspoon Spinach Salad

The name says it all: I hate to wash dishes and like to use as few utensils as possible when cooking. Thus, a spinach salad that only needs a teaspoon. Enjoy!

Makes two medium (lunch size) salads

1 1/2 tsp Dry Mustard

1/2 tsp Yellow Curry Powder

2 tsp Brown Sugar

1 tsp Honey (Locally Sourced Wild Flower Honey is best)

3 tsp Mayo (Dukes is the best)

1/4 tsp Minced Garlic (the Jar Garlic is fine)

Pinch of Salt and Pepper

Several Handfulls of Fresh Baby Spinach

Shaved Parmesan Cheese (To Taste)

In a deep bowl, mix all the dry ingredients together until they are well blended. Then add your wet ingredients. If your salad dressing is too thick for your taste, just thin it out with water. Note: fresh mustard is strong when you first make it. Need it more mellow? Add more mayo or let it sit in the fridge for a day.

Throw in your spinach and liberally toss with your fingers. Plate and serve with shaved parmesan cheese.
