Mark Twain’s Vegan Carrot Cake!!
Mix together:
3c. shredded carrots
1 and 1/4c. turbinado sugar
1/2 c. orange juice
3/4 c. melted vegan margarine
2 tsp. vanilla extract
2 flax egg equivalents
1 c. raisins
Note:(2 tbsp ground flax seeds + 6 tbsp. almond milk, whisked til egg-like consistency.)
Separately, sift together:
2 c. flour, a pinch of salt
2 tsp. Cinnamon
1 tsp. baking soda
2 tsp. baking powder.
Combine the wet and dry ingredients together.
Bake at 350f for 20 minutes if cupcakes and 40-50 minutes if cake.
