Kentucky Fried Vegan Dinner

OneShul prayer leader Rivka Bowlin gives her vegan take on KFC. Kosher, animal friendly and amazingly delicious! I wonder if the Colonel has heard about this!

Kentucky Fried “Chicken”

Use either well drained Tofu or Seitan cutlets.  I find 1/8 to ¼ inch thick slices work best.

Breading:

½ C. Flour (for extra spice use Kentucky Kernel Seasoned Flour)

½ C. Cornmeal

¼ C. Nutritional Yeast

¼ tsp. Cayenne Pepper

1  tsp. Kosher Salt

1  tsp. Cajun or other spicy seasoning

¼ tsp. Garlic Powder

¼ tsp. Pepper

Note: These spices are to taste and it is encouraged to spice things up.

Batter:

¼ C. Soy or Almond milk

½ C. Flour (for extra spice use Kentucky Kernel Seasoned Flour)

4  T. Brown or Spicy Mustard

Salt and Pepper to taste

First add flour and cornmeal, then yeast and spices. In separate bowl, combine batter. Take “Chicken” pices dip in batter then lay both sides in breading. Fry in canola oil until brown on both sides. Serve with gravy for best effect.

Collard Greens

1 Large bunch of Collard Greens

1 onion chopped

1 carrot chopped

5-10 cloves of garlic minced

2 cubes vegetable bouillon or 2 cartons of “no chicken” chicken broth or parve consume

½ tsp. Liquid Smoke

Wash greens well, rough chop, and put in pot. If using broth add just enough water to cover the greens or just use water and bouillon. Add vegetables. Add liquid smoke. Simmer until greens are tender.

Garlic Green Beans

1 lbs. Green (or Pole) Beans or 2 cans of cut green beans

3-5 cloves of garlic minced

For fresh green beans steaming is best. For steaming lightly olive oil, salt, and pepper garlic first.  Simply steam beans and garlic. For fresh green beans not steamed simply put in pot with oiled garlic and just enough water to cover them and simmer. For canned green beans simmer in pot with garlic for as long as possible. The thorough slow cooking will soften the beans and keep any metallic taste away.

Mashed Potatoes

8-10 Potatoes peeled and quartered

Kosher Salt

In pot boil potatoes until a knife can be stabbed into a quarter and it not stick. Drain, mash, and add salt. Serve covered in gravy.

Easy Drop Biscuits

2 ¼ cups Bisquick mix

2/3 C. Soy or Almond milk

Note: For Cheesy add 2 tsp. Nutritional Yeast. For Garlic add 2 minced cloves. Or for fun add both.

Heat oven to 450ºF. Stir ingredients until soft dough forms. Grease baking pan. Use large spoon to “drop” biscuits onto pan. Bake 8 to 10 minutes or until golden brown. Serve open faced covered in gravy.

Gravy

2/3 C. Soy or Almond milk

Kentucky Colonel Flour

Heat milk on medium heat until small bubble form around edges or pot. Remove from heat and whisk flour slowly in until one has sauce. Don’t worry if you use to much flour at first as one can whisk in a little extra milk.

Note: This may take several tries to perfect.
